Astringency vs. Bitterness: They're Not the Same Thing

The word "astringent" gets thrown around a lot in coffee conversations, often to describe anything that tastes a bit off — dry, harsh, too bitter. But astringency has a very specific meaning, and mixing it up with bitterness means you'll end up trying to fix the wrong problem.

Bitterness is something you taste. Astringency is something you feel. It's that drying, puckering sensation in your mouth — the one where your tongue almost sticks to the roof of your mouth. What's happening is that certain compounds are essentially soaking up the natural moisture in your mouth, leaving surfaces rubbing against each other with nothing to lubricate them. It's not subtle when it's real. Think of an unripe banana, an intensely tannic red wine, or a square of 100% dark cacao. That mouth-drying feeling — the one that makes you want to swallow just to get some moisture back — is genuine astringency.

Before you try to diagnose whether your coffee is astringent, it's worth building a reference point first. Eat something you know is astringent, like an unripe fruit or a high-tannin wine. Once you know what the real thing feels like, you'll be much better at telling the difference between actual astringency and a coffee that's just bitter, a bit thin, or slightly off in a way your brain is reading as "dry." That distinction matters, because the fixes are different.

 

First, Let's Clear Up the Tannin Myth

If you've ever heard someone say that coffee has tannins — like wine does — that's actually not true. Tannins are what cause astringency in wine, tea, and dark chocolate. They're compounds that latch onto the moisture-producing proteins in your saliva and essentially dry your mouth out from the inside. Coffee simply doesn't have them.

Coffee does not contain tannins. You'll sometimes hear people in cafés talk about "aerating" their coffee to remove the tannins, or blame tannins for the dryness in a cup — but that's a borrowed explanation from the wine world that doesn't actually apply here. Coffee has its own natural acids (the ones found in the green, unroasted beans before they've been exposed to heat), but these are completely different and don't behave the same way in your mouth.

So if tannins aren't the cause, what is actually producing astringency in coffee? For a long time, that was genuinely hard to answer. But recent research has given us a much clearer picture.

 

What's Actually Behind That Drying Sensation

A study published in 2025 tried to answer this by doing something clever: researchers split brewed coffee into different groups of compounds and had trained tasters drink each one separately, looking specifically for that dry, astringent feeling. After many blind tasting sessions, one group stood out clearly as the main source of the problem.

The culprit turned out to be a specific type of compound that forms during roasting — the very ones responsible for giving coffee its brown color. You know how bread turns golden in the toaster, or how a steak gets that brown crust when you sear it? Coffee goes through a similar browning process when it's roasted, and the compounds that form as a result end up making up a large portion of what's in your cup. They're unavoidable — every roasted coffee has them, from the lightest filter roast to the darkest espresso blend.

The reason these browning compounds cause astringency comes down to what happens during roasting. The natural acids in green coffee beans break down as they heat up, and some of the byproducts of that breakdown get trapped inside these browning compounds — particularly the smaller ones. It's those smaller, loaded compounds that end up in your brewed coffee and interfere with the moisture in your mouth, producing that drying sensation.

 

Does Roast Level Make a Difference?

It does, and in a way that might surprise you. You might assume that lighter roasts would be less of a problem — after all, they've been roasted less, so surely less has gone wrong? But it's more complicated than that.

Light roasts, especially ones that are roasted very quickly or stopped just at the edge of being fully developed, may actually be the worst offenders. They produce enough of those browning compounds to carry the problem into the cup, but aren't roasted long enough to burn away the troublesome stuff trapped inside them. It's a bit like gathering all the ingredients for a problem without quite enough heat to neutralize them.

Darker roasts, by contrast, tend to burn off more of those trapped compounds during the longer roasting process. So from this particular source of astringency, they may actually have an advantage. That said, dark roasts bring their own issues. Pushing a dark roast hard produces other unpleasant flavors — smoke, rubber, a harshness that can feel dry even when it's technically bitterness rather than astringency. So roasting darker isn't the answer. Both ends of the spectrum have their own traps.

 

How to Reduce Astringency When Brewing

Here's the good news: the fix is fairly straightforward. Those browning compounds are stubborn — they don't dissolve into the brew easily or quickly. The more you push your brewing process, the more of them end up in your cup. That means the single most effective thing you can do is extract a little less.

 

Ease Back on Extraction

More extraction means more of everything — including the compounds most likely to dry out your mouth. Experienced brewers have known for years that pushing coffee too far produces a harsh, unpleasant cup, and this is likely a big part of why. The point at which things turn unpleasant is probably lower than most people assume, particularly with lighter roasts.

In practice, this might mean grinding a bit coarser, shortening your brew time, using slightly cooler water, or adjusting how much coffee you use relative to water. Any of these will reduce how much you're pulling out of the beans. You don't need to make a dramatic change — small adjustments can make a noticeable difference.

For dark roasts specifically: if your cup tastes dry or harsh, it's worth asking whether it's actually astringency or just a heavy bitterness you're misreading. Try lowering your water temperature or using a little less coffee. If the problem fades, it was probably bitterness all along — which responds well to those same changes.

 

Try a Thicker Filter Paper

There's one more trick worth experimenting with. Some researchers have suggested that extremely tiny coffee particles — too small to see with the naked eye — might also create a drying sensation on your tongue through simple physical friction, not any chemical reaction. If that's happening in your cup, a denser or thicker filter paper could help by trapping more of those particles before they reach you. The evidence here is still informal, but many home brewers report better results after switching to a thicker filter. It's a cheap experiment worth trying if adjusting your extraction alone doesn't fully solve the problem.
